Colombian huevo lunch
What to do if you are looking forward to vacation, but that is a rather uncertain topic at the moment? Then cook a dish from your favorite holiday country, or the country where you last visited. By bringing the flavors and smells from that country into your own kitchen, you automatically imagine yourself back in that nice place. For this dish a small pan as a souvenir from Colombia, useful for breakfast or lunch. Ps. huevo means egg in spanish ;)
You need this for 1 serving:
- 2 eggs
- 1 large tomato
- 1 avocado
- 1 small red union
- half a red pepper
- little bit salt and pepper
- 1 lime
- 3 rice crackers
- Hummus in the taste you like
Necessities:
- Small pan and otherwise a frying pan
- Cutting board
- Knife
Preparation of egg mixture
Cut the tomato into small parts and chop the red onion. Fry them briefly in your pan and add two eggs. Cut half of the avocado into strips and the other half into cubes. Add the avocado cubes to your egg mixture in the pan. Use your salt and pepper grinder to flavor your egg mixture more
Preparation of rice crackers
Remove three rice crackers from the packaging and spread them with hummus. Grab the half avocado you haven't used yet and place two slices of avocado on each rice cracker. Sprinkle with a pinch of salt and pepper
Variation: Use some of Jonnie Boer's spice mixture "Piccadillo", which will add even more South American flavor to your dish
