fish (or vegan) oven parcels
What you need
✦ baking paper or aluminium foil
✦ 2 white fish fillets around 150 gram (pollak,cod or pangasius) or 2 veganburgers
✦ 1 zucchini sliced in 1cm slices
✦ 1 fennel bulb, cut in large pieces
✦ 1 yellow capsicum, seeds removed and chopped
✦ 10 cherry tomatoes, halved
✦ 1 red onion, peeled and quartered
✦ 1 bunch of fresh herbs- own choice (basil, oregano, thijm, dill, rosemary, chervil)
✦ 1 table-spoon of olive oil, sea salt and black pepper
✦ juice of 1/2 a lemon
✦ 1 tin of black beans about 400 gram, drained and washed
How you make it
Pre-heat the oven to 200 degrees. Prepare one piece of baking paper/foil and spread half of the vegetables on this. Place one fish fillet/vegan burger on top. Spread half of the herbs over this and add sea salt and pepper to taste. Sprinkle with 1 tea-spoon of olive oil and one table-spoon of lemon juice and fold or roll the paper/foil up so that no steam can escape (you can use string if necesary). Repeat for the second parcel. Warm the parcels for 20 minutes in the oven. Check, carefully, by one parcel to see if they are cooked. Meanwhile, heat the black beans with a bit of salt, pepper and water in a pan. Serve together.
