What you need (for 12 chickpea pancakes)
- 250 gram chickpea flour
- 350 gram oat milk (for example from Rude Health)
- 50 gram rinsed spinach (you can also choose grated beetroot or carrot)
- 1 small bunch of parsley
- rind from 1 organic lemon
- sea salt and pepper
- coconut oil or olive oil to cook in
How to make it
Place all ingredients in a blender and add salt and pepper to taste. Blend at high speed until smooth and batter is not too thick. Heat a pan on the stove and add 1 tablespoon of oil. Add a small amount of batter to the pan and turn the pan until the base is covered. Cook for a few minutes, turn and cook on the other side for about 30 counts. Repeat with the rest of the batter. Enjoy!
