Brussel sprouts from the oven

You can prepare these Brussel sprouts from the oven from coach Fleur with sweet potato and sun-dried tomatoes from the oven. Very simple, super fast and also delicious.

Brussels sprouts, those small green cabbages often served as a side dish, not only provide a distinctive flavor but also a range of health benefits. They are rich in nutrients such as vitamin C, vitamin K, and fiber. Vitamin C supports the immune system, while vitamin K is essential for healthy blood clotting and bone health. Brussels sprouts also contain antioxidants, such as glucosinolates, known for their potential protective effects against certain diseases, including cancer. Additionally, eating Brussels sprouts provides a good source of folate, important for cell growth and repair.

What do you need for Brussel sprouts (for two people)

  • 500 grams of Brussels sprouts
  • 2 sweet potatoes
  • 8-10 sun-dried tomatoes
  • 2 cloves of garlic
  • balsamic vinegar & olive oil

How you make it

Preheat the oven to 200 degrees. Clean the Brussels sprouts and cut them in half. Then cut the sweet potatoes into wedges, the sun-dried tomatoes into strips and the garlic into thin slices. Place everything on a baking tray and drizzle with balsamic vinegar & olive oil (about 2 tablespoons each). If necessary, add salt and pepper for extra taste and then place it in the oven. Bake everything in the oven for 35 minutes (do not forget to scoop 1-2 times in between).

Tip: Make an extra portion for lunch the next day. It is also delicious cold.
