Potato cauliflowersoup

This is what you need (4 people)

  • 1 onion
  • 1 clove of garlic
  • 5 small potatoes cut into wedges
  • 1 cauliflower
  • 1/2-1 teaspoon garam masala
  • 1/2 tablespoon vegetable stock
  • about 1 liter of water
  • half a can of lentils (or other legumes)

How to make it

Cut the garlic and onion into pieces. Heat a stockpot over medium heat with a little olive oil. Saute the garlic and onion in the pan. Then stir-fry the pieces of potatoes with the garam masala and add the pieces of cauliflower after about two minutes. Then add the vegetable stock with (boiled) water. Let the soup simmer gently. Prick with a fork if the vegetables are soft. When they are soft, add the lentils and coarsely blend the soup with a stick blender. Add salt and pepper to taste and choose roasted pumpkin seeds or vegan cheese as a topping. Enjoy our potato cauliflowersoup!
