Cauliflower rice with satay

What you need for cauliflower rice with satay

  • 400 grams of cauliflower rice
  • 4 vegetarian ‘chicken’ from the Vegetarian Butcher or another meat substitute
  • 2 spring onions
  • 1 clove of garlic
  • 1 teaspoon of cumin
  • a little pepper
  • a red pepper
  • dash of soy sauce
  • olive oil for baking

For the satay

  • 40 grams of pure peanut butter
  • 100 ml of coconut milk
  • 1 clove of garlic
  • 1 cm of ginger
  • 1 onion
  • 1 teaspoon of cumin
  • 1 teaspoon of sambal
  • dash of soy sauce

Cauliflower rice with vegan satay and lime

How to make it

Mix the vegetarian ‘chicken’ together with the soy sauce, garlic clove, red pepper (finely chopped), cumin and pepper in a container. Stir well and put the chicken with marinade in the refrigerator. Cut the spring onions into rings.

For the satay sauce: Finely chop the garlic, ginger and onion. Heat a little olive oil in a saucepan and first fry the onion and ginger and then briefly the garlic. Add the peanut butter and coconut milk and stir well. When the sauce thickens, stir in the soy sauce, sambal and cumin. Let the satay sauce cook over low heat until the sauce is thick. In the meantime, heat a tablespoon of olive oil in a pan and fry the marinated vegetarian ‘chicken’ until done.The cauliflower rice is ready-to-buy, but also very easy to make by grinding the cauliflower florets in the food processor. You can best stirfry the cauliflower rice briefly. Enjoy it!
