Sweet potato noodles

Have you ever eaten sweet potato noodles? They are super easy to prepare, delicious and very nutritious. In this recipe we combine sweet potato noodles with teriyaki sprouts.

Sweet potato noodles provide a flavorful and nutritious variation to conventional noodle dishes. Crafted from thinly sliced or spiralized sweet potatoes, these noodles offer a gluten-free option that is abundant in nutrients.

Sweet potato noodles possess a gentle sweetness and a distinctive texture that pairs well with a variety of sauces and ingredients. They can be prepared by boiling or stir-frying, showcasing their versatility for diverse culinary creations.

From a nutritional standpoint, sweet potatoes serve as an excellent source of vitamin A, fiber, and antioxidants. Notably, they boast a lower glycemic index compared to regular wheat noodles, contributing to a more stable blood sugar level.

What you need

  • 4 sweet potatoes
  • 200 grams of mixed mushrooms
  • 350 grams of sprouts
  • 1 onion
  • 2 cloves of garlic
  • 50 ml of soy sauce
  • 1 cm of fresh ginger
  • 2 tbsp sesame seed
  • hand fresh coriander
  • chilli pepper and salt
  • olive oil

How you make it

Preheat the oven to 180 degrees. Remove the butt and the outer shell of the sprouts. Halve them. Put them in a bowl and add the soy sauce, 1 chopped clove of garlic, the grated ginger and a dash of olive oil. Season with chili pepper and stir. Divide the sprouts over a baking sheet covered with parchment paper. Roast them in the oven for 20 minutes. Stir in the meantime.

Peel the sweet potatoes. Make beautiful long strings with the spiralizer. Clean the mushrooms with a kitchen paper. Cut them into pieces. Peel and chop the onion and finely chop the garlic. Fruit this in some olive oil. Add the mushrooms and fry them briefly. Add the sweet potato noodles and scoop the whole for 5 minutes. Divide the sprouts plus the baking water over the noodles. Roast the sesame seed briefly in a dry frying pan. Garnish the noodles with the sesame seeds and coriander.
