How you make it

Mix the vegetarian 'chicken' together with the soy sauce, garlic clove, red pepper (finely chopped), cumin and pepper in a container. Stir well and put the chicken with marinade in the refrigerator. Cut the spring onions into rings.

For the satay sauce: Finely chop the garlic, ginger and onion. Heat a little olive oil in a saucepan and first fry the onion and ginger and then briefly the garlic. Add the peanut butter and coconut milk and stir well. When the sauce thickens, stir in the soy sauce, sambal and cumin. Let the satay sauce cook over low heat until the sauce is thick. In the meantime, heat a tablespoon of olive oil in a pan and fry the marinated vegetarian 'chicken' until done. The cauliflower rice is ready-to-buy, but also very easy to make by grinding the cauliflower florets in the food processor. You can best stirfry the cauliflower rice briefly. Enjoy it!
