Curry carrot- and potato meal soup
Fancy a tasty nutritious soup? This meal soup is easy, filling and everyone loves it!
What you need (for 4 persons)
- 8 large potatoes
- 4 large carrots
- 1 onion
- 2 bouillon cubes
- 3 tbsp curry
- 1 pack of bacon from the Vegetarian Butcher
- pepper to taste
How you make it
Chop the onion coarsely and fry in the coconut oil and the curry (add the curry if the onions are glassy). Add a liter of stock with the cutted potatoes and carrots. Cook for 20 minutes with the lid on the pan. Meanwhile, bake the bacon in a frying pan. Check whether the carrot and potatoes are soft enough and puree to a smooth soup. Taste and see if the soup still needs curry or pepper. Add the bacon when you serve the soup. Enjoy!
