curry carrot- and potato meal soup
What you need (for 4 persons)
✦ 8 large potatoes ✦ 4 large carrots ✦ 1 onion ✦ 2 bouillon cubes ✦ 3 tbsp curry ✦ 1 pack of bacon from the Vegetarian Butcher ✦ pepper to taste
How you make it
Chop the onion coarsely and fry in the coconut oil and the curry (add the curry if the onions are glassy). Add a liter of stock with the cutted potatoes and carrots. Cook for 20 minutes with the lid on the pan. Meanwhile, bake the bacon in a frying pan. Check whether the carrot and potatoes are soft enough and puree to a smooth soup. Taste and see if the soup still needs curry or pepper. Add the bacon when you serve the soup.
