Chickpea pancakes

Pancakes, pancakes, pancakes! But now a healthy version from chickpeas.

What you need for 12 pancakes  | recipe Rude Health

  • 250 gram chickpea flour
  • 350 gram oat milk (for example from Rude Health)
  • 50 gram rinsed spinach (you can also choose grated beetroot or carrot)
  • 1 small bunch of parsley
  • rind from 1 organic lemon
  • sea salt and pepper
  • coconut oil or olive oil to cook in

This is how you make it

Place all ingredients in a blender and add salt and pepper to taste. Blend at high speed until smooth and batter is not too thick. Heat a pan on the stove and add 1 tablespoon of oil. Add a small amount of batter to the pan and turn the pan until the base is covered. Cook for a few minutes, turn and cook on the other side for about 30 counts. Repeat with the rest of the batter. Enjoy!
