Lentil spinach salad
A richly filled salad of baby spinach, green asparagus, avocado, lentils and cherry tomatoes. Everyone loves this lentil salad!
What you need (for 2 persons)
- 1 can or glass jar with lentils
- 2 good hands baby spinach
- 1 avocado
- box of cherry tomatoes
- tray of green small asparagus
- 3 tablespoons of olive oil
- 1 tablespoon of sesame seeds
- good hand fresh basilsalt and pepper
How you make it
Rinse the lentils well under cold water. Wash all other vegetables thoroughly. Put a pan of water on the fire, add the asparagus (just cut the ends off) as soon as it is boiling and boil for 3 minutes. Add the lentils with the spinach together in a bowl, halve the cherry tomatoes and cut the avocado into strips / pieces and add both. Remove the asparagus from the fire and rinse with cold water then add to the salad (without all the water residue). Mix everything together and season with the oil, basil, sesame seeds and some salt and pepper. Enjoy!
