Pumpkin smoothie bowl
In the winter it is lovely to eat warm meals. This can start with your breakfast! Try this comforting pumpkin smoothie bowl. Fun and healthy!
What you need (for one portion)
70 grams boiled (or steamed) flesh pumpkin
1 tsp cinnamon
1/4 tsp curcuma
1/2 to 1cm freshly grated ginger
1 tbsp almond paste
150 ml vegetable based milk (such as almond milk)
Toppings (optional)
handful of pumpkin seeds
chopped dried fig
1/2 tbsp grated coconut
How you make it
Place all ingredients, except for the toppings, in a blender and mix until smooth. Pour the smoothie into a bowl and decorate with the toppings above or your own toppings. Enjoy!
