What you need (for 2 persons)
✦ 1 tin of tuna (for vegetarians you can use the tuna from the vegetarian butcher)
✦ 3 pickles
✦ 3 tbsp Greek yogurt (replace regular yoghurt for soya yoghurt)
✦ 1 half red onion
✦ ½ tsp mustard
How you make it
Scoop out the tuna and rinse with water, then cut the pickles and oinion into pieces. Mix the tuna with the pieces of pickle and onion in a bowl. Stir in the mustard, Greek yogurt and onion. For example, serve the tuna salad on a quinoa, buckwheat cracker or as Michelle: cut two courgettes in half and hollow them out, and add the tuna salad. A nutritious and powerful lunch!
