Sweet potatosoup

Try our sweet potato soup. A delicious meal with an Asian twist; sweet potatoes with coconut! 

What you need (for 2 persons)

  • 2 sweet potatoes
  • 400 ml of coconut milk
  • 2 tsp paprika powder
  • 2 tsp cinnamon
  • 1 tsp apple cider vinegar
  • 1 tsp mustard seed
  • fresh coriander

How you make it 

Peel the sweet potatoes and cut into pieces. Steam them in a pan with steam basket for about 45 minutes. The sweet potatoes should be soft, so occasionally poke through with a fork to check this. Then put the sweet potatoes in the blender with the other ingredients (just not the coriander) and add 200 ml of water. Blend the soup into a creamy whole. Pour the soup into a pan and let it briefly warm up. Pour the soup in two bowls and sprinkle some coriander on top. Enjoy!
