BBMG

BBMG is Basil, Broccoli, Macaroni & Vegetables. A meal that requires abbreviation. BBMG is comfort food at its best: cheesy pasta with pesto and packed with delicious things.

This is what you need (for 4 people)

  • 1 large bunch of basil (about 50 gram). With stem and all. (packed with nutrition)
  • 1 small broccoli (about 200 gram) in small pieces, also with stem etc.
  • 300 gram macaroni
  • 250 gram vegan cheese
  • 150ml Rude Health Hazelnut Drink
  • 2 cloves of garlic
  • a few slices of bread

How you make it

Pre-heat the oven to 200 degrees (celcius) with an oven rack in the middle. Bring a large pan with water to the boil. Peel the garlic and place it together with the basil, broccoli and some olive oil in a food processor and wizz until it finely crumbles. Place 3/4 of the crumble mix in a bowl and place aside. Add the bread to the rest of the crumble mix in the food processor and wizz until breadcrumbs. Cook the pasta for 2/3 of the recommended cooking time - it will finish cooking in oven. Leave the pasta to drain and keep 1 cup of pasta water for later. Place the hot pasta back into the pan and add 3/4 of the cheese and the Rude Health Hazelnut drink. Add the pasta water to thin out the sauce so that it has the thickness of thick cream. Add 3/4 of the broccoli mix. Now it may look a bit wet but the pasta will absorb the rest of the fluid. Add salt and pepper and place everything in a large oven dish. Sprinkle the breadcrumbs and the rest of the cheese over the top. Bake for 20-25 minutes until the top is golden brown and crispy.
