Beans and pesto
Looking for an easy evening meal that is healthy and high in protein? Search no further! This surprising combination of beans and pesto is highly recommended!
What you need (for 4 people)
1 bag of spinach
2 or 3 cans of beans of your choice (such as giant beans, cannellini beans, black beans or a mix)
1 pomegranate
1 handful of pumpkin seeds
1 jar of pesto (or make your own)
How you make it
Rinse and drain the beans. Stir fry the spinach until the leaves have shrunk. Add the beans and pesto. Let it heat up well and divide it over the plates. Add the pomegranate seeds and pumpkin seeds. Enjoy!
