broccoli- parsnip soup

What you need (for 2 persons)

✦ 1 large broccoli
✦ 2 parsnips
✦ 500 ml vegetable stock
✦ 1 red onion
✦ 2 cloves of garlic
✦ 1 tsp of turmeric
✦ 150 ml oat milk
✦ add pepper to taste

How you make it

Cut the onion, garlic, broccoli and parsnips into pieces. Heat a soup pan on the fire with a little olive oil. Bake the pieces of red onion and garlic. Then add the pieces of parsnip and turmeric, stir fry briefly in the pan for about 2 minutes. Then add the broccoli and the vegetable stock. Let this cook gently for about 20 minutes. Remove the pan from the heat and puree everything with the hand blender. Then add the oat milk for a creamy soup.
