Broccoli tempeh salad
Try this unusual but really tasty salad with broccoli, tempeh and pomegranate seeds. Full of fiber and antioxidants!
What you need (for 4 persons)
- 1 block of organic tempeh
- 1 broccoli
- 4 hands shiitakes
- 1 cucumber
- bowl of broccoli sprouts
- 1 vegetable stock cube without yeast
- 4 tsp dried or fresh oregano
- 4 tsp dried or fresh thyme
- 4 cloves garlic
- 4 hands pomegranate seeds
How you make it
Mix the bouillon cube in almost boiling water and pour it into a bowl. Crush the clove of garlic and cut in four parts. Put the oregano, thyme, garlic in the bowl with stock.
Cut the tempeh into pieces and immerse them in the bowl of broth. Leave the tempeh in the bowl for about 30 minutes. Cut the broccoli and shiitakes into pieces and steam them in a steampan. Heat a grill pan and pour a little stock on it from the tempeh. Grill the tempeh pieces on both sides golden brown. Make sure that the grill pan stays moist by pouring some stock.
Grab your salad bowl and decorate it with the broccoli florets, shiitakes, cucumber, tempeh, broccoli sprouts & pomegranate seeds!
