Exotic lentil and carrot soup with ginger
Ginger is a powerful root-like spice with a fresh and spicy taste. Give your soup a spicy twist by adding ginger. Delicious in combination with this carrot and lentil soup.
What you need (for 4 persons)
- 1 onion
- 2 cloves of garlic
- 3 cm of ginger
- 1 tablespoon of olive oil
- 5 carrots
- 1 teaspoon of ketoembar
- 1 cup of red lentils
- 1 cube of vegetable stock
- 4 tablespoon of olive oil
- 150 milliliters of coconut milk
- 1 lime
- pepper
- fresh coriander leaves
How you make it
Peel the onion and garlic. Cut the onion into small cubes and the garlic into thin slices. Clean the carrots and cut into slices of about 1/2 cm thickness. Peel the ginger and cut into several coarse pieces. Fry the onion in olive oil over medium heat. Then add the garlic and the ginger, and also gently bake. Add the carrot slices and the cumin. Pour in hot water and add the cup of lentils.
Bring everything to boil and let it simmer for 15 minutes. Then season (this should not be earlier!) With broth powder and black pepper (otherwise the lentils will not cook well). Pour some extra water and let it simmer for 10 minutes. Remove the pan from the heat, add the coconut milk and let it cool down. Take the ginger pieces from the soup and puree everything with a hand blender. Stir in lime juice to refresh this earthy soup. Serve the soup with leaves of fresh coriander.
