roasted cauliflower salad
What you need (for 2 persons)
✦ 1/2 cauliflower ✦ 1 eggplant ✦ 2 tb tamari ✦ 1 tl olive oil ✦ pepper ✦ 50 g green lentils (from the pot) ✦ small hand olives ✦ radish sprouts
Dressing
✦ juice of 1/2 lemon ✦ 1 tahini
How you make it
Preheat the oven to 180 degrees. Cut the cauliflower and eggplant into pieces and mix with the tamari, olive oil and pepper in a bowl. Spread the vegetables on a baking sheet and place in the oven for about 20 minutes. Mix the ingredients for the dressing. If the dressing is too thick to your liking, add a little lukewarm water. Remove the vegetables from the oven and allow them to cool down. Mix all the ingredients in a bowl and pour the dressing over them.
