Roasted cauliflower salad
Fancy some vegetables? This roasted cauliflower salad with eggplant and a delicious dressing is tasty and healthy!
What you need (for 2 persons)
- 1/2 cauliflower
- 1 eggplant
- 2 tb tamari
- 1 tl olive oil
- pepper
- 50 g green lentils (from the pot)
- small hand olives
- radish sprouts
Dressing
- juice of 1/2 lemon
- tahini
How you make it
Preheat the oven to 180 degrees. Cut the cauliflower and eggplant into pieces and mix with the tamari, olive oil and pepper in a bowl. Spread the vegetables on a baking sheet and place in the oven for about 20 minutes. Mix the ingredients for the dressing. If the dressing is too thick to your liking, add a little lukewarm water. Remove the vegetables from the oven and allow them to cool down. Mix all the ingredients in a bowl and pour the dressing over them. Enjoy!
