scarlet runner beans with capsicum and tomato
The scarlet runner bean is a plant in the legume family. They are longer and thinner than string beans and rougher on the outside. This extremely versatile bean is rich in various vitamins and minerals such as vitamin C, calcium and iron. This bean also contains lots of fibres. A perfect bean for a delicious and healthy recipe!
What you need
- 500 gram scarlet runner beans
- 1 finely chopped onion
- 15 gram butter or coconut fat
- 1 red capsicum
- 3 tomatoes
- salt & pepper
- 100 gram vegan cheese
How you make it
Clean the beans and cut them up into small pieces. Fry the onion in hot butter, add the beans and chopped capsicum. After 10 minutes, add the peeled and chopped tomatoes with the salt, pepper and oregano. Mix well and allow to cook for another 10 minutes. Add the grated cheese and allow to melt or place the pan under the grill and allow the cheese to melt and slightly colour.
