Vegan pasta pesto
Do you fancy an easy, healthy pasta? This vegan pesto pasta is healthy and delicious.
What you need (for 3-4 persons)
- olive oil
- 1 onion
- 2 cloves of garlic
- 1 zucchini
- 1 pepper
- 250 grams of leaf spinach
- 20 olives
- 1 can artichoke hearts
- 2 avocados
- 1 red pepper
- hand pumpkin seeds
- 4 tomatoes
- 1 tbsp pesto or a bunch of fresh basil
- 250 grams uncooked (split peas) pasta
- to taste: pepper, salt, curry powder and paprika powder
How you make it
Cut the onion and garlic into pieces. Heat a little olive oil in a frying pan, and fry the garlic and onion. Cook the pasta according to the method of preparation. Cut the zucchini, peppers, artichoke hearts, avocado, red pepper and tomatoes into pieces. Stir fry the zucchini and paprika in the frying pan for a few minutes, then add the artichoke hearts, red pepper and herbs to taste. Finally the pieces of tomato, avocado and fresh spinach (short stir-fry).
Drain the pasta and scoop in a large bowl and mix together with the pesto. Finally mix the vegetables from the frying pan with the pumpkin seeds.
